Roasted Eggplant and Tahini Soup with Spiced Beef
Charred, roasted eggplant blended with tahini, garlic, and lemon into a smoky, velvety soup, topped with cinnamon-spiced beef and toasted pine nuts.
Why you'll love Roasted Eggplant and Tahini Soup with Spiced Beef
This soup tastes like baba ghanoush made warm and silky. Eggplant roasted until collapsed and charred brings a deep smokiness, and blended with tahini, garlic, lemon, and broth it turns velvety and rich. A topping of ground beef browned with cumin, cinnamon, and allspice, plus toasted pine nuts, makes it a full meal.
Charring the eggplant is where the flavor comes from. Roasting halves cut side down at high heat until the flesh is completely soft and the skins blister gives you that smoky, almost meaty depth, and scooping out the flesh leaves the bitter skins behind. Tahini goes in at the blending stage, where it thickens and enriches the soup.
It is a soup for fall and winter that tastes complex and asks very little of you.
Quick overview: This Roasted Eggplant and Tahini Soup with Spiced Beef takes 15 min of hands-on time and about 1 hr 5 min in all and makes 4 servings, each about 1 1/2 cups with topping. You'll need a pot, a skillet, a sheet pan, and a blender.
Ingredients
- 2 large eggplants (about 2 1/2 lb), halved lengthwise
- 3 tbsp olive oil, divided
- 1 medium onion, chopped
- 5 cloves garlic, divided
- 4 cups chicken bone broth Label: chicken bones, water, vegetables, herbs, and salt, with no sugar, natural flavors, or oil
- 1/4 cup tahini Label: sesame seeds, and salt if any
- 2 tbsp fresh lemon juice
- 1 1/4 tsp fine sea salt, divided
- 1 lb ground beef
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/4 cup pine nuts
- 1/4 cup chopped parsley
- Make it from scratch: Chicken Bone Broth
Instructions
- Roast the eggplant: Heat the oven to 450°F (230°C). Brush the cut sides of the eggplant with 1 tablespoon of the olive oil and lay them cut side down on a sheet pan. Roast for 35 to 40 minutes, until completely collapsed and the skins are blistered. Let them cool slightly, then scoop out the flesh.
- Build the soup: Heat 1 tablespoon of the olive oil in a pot over medium heat. Cook the onion for 6 minutes, until soft, then add three of the garlic cloves, minced, for 1 minute. Add the eggplant flesh, broth, and 3/4 teaspoon of the salt and simmer for 10 minutes.
- Blend: Add the tahini and lemon juice and blend with an immersion blender, or in batches in a blender with the lid vented, until silky. Taste for salt and lemon.
- Toast the pine nuts: Toast the pine nuts in a dry skillet over medium heat for 2 to 3 minutes, until golden. Tip them out.
- Spice the beef: Heat the remaining tablespoon of olive oil in the skillet over medium-high heat. Add the beef, the remaining garlic, minced, the cumin, cinnamon, allspice, and the remaining 1/2 teaspoon of salt. Cook for 6 to 8 minutes, breaking it up, until browned and cooked through to 160°F (71°C).
- Serve: Ladle the soup into bowls and top with the spiced beef, pine nuts, parsley, and a drizzle of olive oil.
Storage and leftovers
Refrigerate the soup and beef separately for up to 4 days.
Reheat the soup gently, adding a splash of broth if it has thickened. The soup freezes for up to 3 months.
Variations
- Lamb: Use ground lamb in place of the beef.
- Yogurt swirl: Swirl a spoonful of whole-milk Greek yogurt into each bowl.
- Smoky: Char the eggplant directly over a gas flame for even more smoke.
- Pomegranate: Scatter pomegranate seeds over the top for color and brightness.
Notes and tips
- Roast until collapsed: The eggplant should be completely soft for a silky soup.
- Vent the blender: Hot liquid expands; leave the lid's center open and cover with a towel.
- Stir the tahini jar: Tahini separates; stir the oil back in before measuring.
- Toast pine nuts carefully: They burn quickly. Watch them closely.
Nutrition and mindful eating
- Eggplant brings fiber and a smoky depth when roasted, and it is a non-starchy vegetable.
- Tahini adds healthy fat and calcium and makes the soup velvety.
- Ground beef brings protein, iron, and zinc, and the warm spices season it deeply.
- Pine nuts add a buttery crunch and more real fat.
- As you eat, notice the smoky, creamy soup against the warm, spiced beef, and pay attention to how a bowl of soup with protein holds you through the evening.
