Grilled Chicken Caesar with Anchovy Dressing

Lemon-garlic chicken grilled until charred and juicy, sliced over crisp romaine with a bold anchovy Caesar dressing and parmesan crisps.

Why you'll love Grilled Chicken Caesar with Anchovy Dressing

A Caesar is at its best in summer, when it is too hot to cook indoors and the grill is already going. Chicken breasts, pounded to an even thickness and marinated in lemon, garlic, and olive oil, grill in about 12 minutes with dark stripes and juicy centers. They go over cold, crunchy romaine tossed in a dressing built on anchovies, garlic, lemon, Dijon, and parmesan, with lacy parmesan crisps broken over the top for crunch.

Anchovies are what make a Caesar taste like a Caesar. Mashed into a paste with garlic and salt, they melt into the dressing as deep, savory, salty flavor, the same way they vanish into a pan sauce. Avocado-oil mayonnaise gives the dressing a creamy body that clings to every leaf, and the parmesan crisps, baked for a few minutes until golden, bring the toasty crunch and nutty flavor a Caesar is known for.

Pounding the chicken is the step that keeps it juicy. A breast is thick at one end and thin at the other, so on the grill the thin end dries out before the thick end is cooked. Pounded to an even 3/4 inch, the whole piece reaches 165°F at the same moment.

Ingredients

  • 1 1/2 lb boneless, skinless chicken breasts (2 large)
  • 5 tbsp olive oil, divided
  • 1/4 cup fresh lemon juice (from about 2 lemons), divided
  • 1 tsp finely grated lemon zest
  • 4 cloves garlic, divided
  • 3/4 tsp fine sea salt, divided
  • 1 tsp freshly ground black pepper, divided
  • 3 oz parmesan, finely grated (about 1 cup), divided
  • 5 anchovy fillets packed in olive oil Label: anchovies, olive oil, and salt
  • 1/4 cup avocado-oil mayonnaise Label: avocado oil, eggs, vinegar, and salt, with no sugar or seed oils
  • 2 tsp Dijon mustard Label: mustard seed, vinegar, water, and salt
  • 1 tsp avocado oil, for the grates
  • 2 large romaine hearts

Instructions

  1. Pound and marinate: Lay the chicken between two sheets of parchment and pound the thick end with a meat mallet or a rolling pin until each breast is an even 3/4 inch thick. Whisk 2 tablespoons of the olive oil, 2 tablespoons of the lemon juice, the lemon zest, 2 of the garlic cloves, finely grated, 1/2 teaspoon of the salt, and 1/2 teaspoon of the pepper in a shallow dish and turn the chicken in it. Cover and refrigerate for 30 minutes to 4 hours. The salt seasons the meat through, and the oil keeps it from sticking to the grill.
  2. Bake the parmesan crisps: Heat the oven to 400°F (200°C) and line a sheet pan with parchment. Drop 2/3 cup of the parmesan in 12 small mounds, 2 inches apart, and flatten each into a thin round. Bake for 5 to 7 minutes, until golden all over and lacy. Let them cool on the pan for 5 minutes, since they crisp as they cool.
  3. Make the dressing: Chop the anchovies and the remaining 2 garlic cloves together on a cutting board with the remaining 1/4 teaspoon of salt, then press and drag the flat of your knife over the pile until it turns into a smooth paste. The salt acts like grit and breaks them down. Scrape the paste into a bowl and whisk in the mayonnaise, Dijon, the remaining 2 tablespoons of lemon juice, and the remaining 1/2 teaspoon of pepper, then slowly whisk in the remaining 3 tablespoons of olive oil until creamy. Stir in the remaining 1/3 cup of parmesan. Taste it: it should be bold, since romaine is mild.
  4. Grill the chicken: Heat a grill to medium-high, about 425°F to 450°F, and oil the grates with the avocado oil on a folded paper towel held in tongs. Lift the chicken from the marinade, letting the excess drip off, and grill for 5 to 6 minutes a side, turning once, until it is well marked and an instant-read thermometer in the thickest part reads 165°F (74°C).
  5. Rest and slice: Move the chicken to a clean board and let it rest for 5 minutes, so the juices settle back into the meat, then slice it across the grain.
  6. Toss and serve: Cut the romaine hearts crosswise into 1-inch ribbons and toss them in a large bowl with about two-thirds of the dressing until every leaf is coated. Divide among plates, top with the chicken, break the parmesan crisps over the top, and spoon the rest of the dressing over the chicken.

Storage and leftovers

Refrigerate the grilled chicken, the dressing, and the undressed romaine separately for up to 3 days. Dressed romaine wilts within an hour, so toss only what you will eat.

Keep the parmesan crisps in an airtight container at room temperature for up to 3 days. If they soften, 2 minutes in a 400°F (200°C) oven crisps them again.

Variations

  • Grilled romaine: Halve the romaine hearts lengthwise, brush the cut sides with olive oil, and grill them cut side down for 1 to 2 minutes, until charred at the edges. Serve each half whole, with the dressing spooned over.
  • With soft-boiled eggs: Add a halved 7-minute egg to each plate for a richer lunch.
  • Kale Caesar: Use 2 bunches of lacinato kale, stems removed and thinly sliced, in place of the romaine, and massage the dressing into it for a minute so it softens. Dressed kale holds for a day, so it packs well.
  • Salmon Caesar: Grill 1 1/2 lb of salmon fillets in place of the chicken, skin side down first, until the thickest part reads 145°F (63°C).

Notes and tips

  • Check the anchovy label: Look for anchovies, olive oil, and salt. Anchovies packed in olive oil are softer and milder than salt-packed ones, and they mash easily.
  • Use a thermometer: Chicken breast is juiciest pulled right at 165°F (74°C). An instant-read thermometer takes the guessing out.
  • Dry the romaine well: Water on the leaves thins the dressing and keeps it from clinging. A salad spinner, or a roll in a clean towel, does it.
  • Grate the parmesan finely: A rasp grater gives fluffy, fine parmesan that melts into lacy crisps and dissolves into the dressing.

Nutrition and mindful eating

  • Chicken breast brings plenty of protein for a lunch that keeps you going, and grilling adds deep flavor with only a little oil.
  • Anchovies are small, oily fish that carry long-chain omega-3 fats and calcium, and a few fillets season the whole dressing.
  • Romaine is crisp and water-rich, with vitamin A, vitamin K, and folate.
  • Olive oil, mayonnaise, and parmesan are the real fats, and they carry flavor and make a salad lunch filling.
  • As you eat, notice the cold crunch of the romaine against the warm, charred chicken and the salty bite of the dressing, and check in mid-afternoon: this salad should hold you at least 3 to 4 hours, with steady energy through the rest of the day.

Frequently asked questions

Have a question about this Grilled Chicken Caesar with Anchovy Dressing? Start here, with the questions people ask most.

What do the anchovies taste like in the dressing?

Savory and salty, with a depth closer to aged parmesan than to fish. Mashed with garlic and salt and whisked into lemon, they melt right into the dressing.

Is there egg in the dressing?

Yes, through the avocado-oil mayonnaise, which is made with eggs, oil, and vinegar. It gives the dressing the creamy body a classic Caesar gets from a raw yolk.

Can I cook the chicken indoors?

Yes. Use a grill pan or a heavy skillet over medium-high heat for the same 5 to 6 minutes a side, until the chicken reads 165°F (74°C).

Can I make it ahead for lunches?

Yes. Grill the chicken and make the dressing and crisps up to 3 days ahead. Pack the romaine and the dressing separately and toss them right before eating.
