Pistachio Semifreddo

A frozen Italian mousse of whipped cream and egg folded with ground toasted pistachios, sliced cold and scattered with chopped nuts.

Why you'll love Pistachio Semifreddo

Semifreddo means half-cold, and it is the Italian frozen dessert that needs no machine: whipped cream and a warm, whisked egg custard folded together, frozen in a loaf pan, and sliced. It is lighter and creamier than ice cream, and this one is full of toasted pistachios ground into the base and scattered on top.

The egg base is what keeps it soft. Whisking the eggs with allulose over simmering water until thick and pale cooks them gently and fills them with air, and folded into whipped cream, that light custard freezes into something smooth and sliceable rather than icy. Toasting the pistachios first deepens their flavor.

Make it a day ahead. A slice is a beautiful end to a summer dinner.

Quick overview: This Pistachio Semifreddo takes 30 min of hands-on time and about 8 hr 40 min in all and makes 8 servings, each 1 slice. You'll need a pot, a skillet, a loaf pan, and a food processor.

Ingredients

  • 3/4 cup shelled unsalted pistachios, divided
  • 3 large eggs
  • 1/3 cup allulose Label: allulose, and nothing else
  • a pinch of fine sea salt
  • 1 1/2 cups cold heavy cream Label: cream, with no gums or carrageenan
  • 1/2 vanilla bean, split and scraped

Instructions

  1. Toast and grind: Toast the pistachios in a dry skillet over medium heat for 3 to 4 minutes, until fragrant. Let them cool. Grind 1/2 cup of them finely in a food processor and roughly chop the rest.
  2. Line the pan: Line a 9-by-5-inch loaf pan with plastic wrap, leaving an overhang.
  3. Whisk the custard: Set a heatproof bowl over a pot of barely simmering water, making sure the bottom does not touch the water. Whisk the eggs, allulose, and salt in the bowl for 6 to 8 minutes, until thick, pale, and doubled in volume, and it reaches 160°F (71°C). Take it off the heat and keep whisking for 2 minutes as it cools.
  4. Whip the cream: Whip the cream with the vanilla seeds to soft peaks.
  5. Fold: Fold the ground pistachios into the egg custard, then fold in the whipped cream gently until no streaks remain. Pour into the pan, cover, and freeze for at least 8 hours.
  6. Serve: Lift the semifreddo out by the plastic, slice with a warm knife, and scatter the chopped pistachios over each slice.

Storage and leftovers

Freeze, tightly wrapped, for up to 2 weeks.

Let slices sit at room temperature for 5 minutes before eating so they soften slightly.

Variations

  • Hazelnut: Use toasted hazelnuts in place of the pistachios.
  • Berry swirl: Swirl in a little mashed raspberry before freezing.
  • Espresso: Fold in a tablespoon of cooled espresso with the cream.
  • Cardamom: Add a pinch of ground cardamom to the custard.

Notes and tips

  • Use a thermometer: Whisk the eggs until they reach 160°F (71°C) so they are fully cooked.
  • Do not let the bowl touch the water: Direct heat scrambles the eggs.
  • Fold gently: Keep the air in the cream and custard.
  • Use unsalted pistachios: They let you control the salt.

Nutrition and mindful eating

  • Pistachios bring healthy fat, protein, fiber, and a vivid green color from their natural pigments.
  • Eggs and cream make a rich, satisfying base, which is why a slice feels like enough.
  • Allulose sweetens lightly and keeps the semifreddo soft.
  • Toasting the nuts deepens their flavor so the dessert tastes rich with less sweetness.
  • As you eat, notice the cold, creamy texture and the toasty pistachios, and pay attention to how slowly you can enjoy a frozen dessert.
